Probstei Kale Soup
2 pounds of salted beef
1 medium onion, chopped and sautéed in butter until golden
4½ pounds of fresh kale
2 pounds of meatballs
shortening
½ pound of potatoes
Boil the meat and the sautéed onion until you have a broth. Remove meat and add finely chopped kale. Boil until done. Dice the meat and add to soup. Form very small meatballs, blanch, brown, and add to soup. Boil potatoes in their skins, cube finely, and add to soup.
