Old Fashioned Potatoe Salad
9 cups cubed unpeeled round red potato (about 3 lbs.) or another potatoe
of your choice
1/2 c. diced onion
1/2c. diced celery
1/2 c. cup diced radishes
1/4 c. sweet or dill pickle relish (optional)
3 hard-cooked egg, mashed
1/3 c. mayonnaise (or more to make it creamy)
2 TBS. chopped fresh parsley
1 tsp. prepared mustard (I use other mustards at times - i.e Dijon)
3/4 tsp. salt
1/4 tsp. pepper
1/4 tsp garlic salt
Place potatoes in a large pot, cover with water, and bring to boil. Cook about
until tender.
Drain & cool; cut into cubes, place in bowl with next 5 ingredients;
toss gently.
Combine mayonnaise and next 5 ingredients; stir well. Pour over potato
mixture;
toss to coat. Cover and chill.
