Amish Potato Salad


6 med potatoes
3 hardboiled eggs
1 onion
1/2 bunch celery
4 tbsp mayonnaise
2 tbsp vinegar
1 tsp mustard
2 tbsp sugar
parsley
celery seed

Mix sugar & mayo together than add mustard , pour vinegar slowly as you stir. Set aside ( You may want to double this depending on how moist you like your salad). Peel & boil potatoes until soft, dice into cubes, chop celery, onion and hardboiled eggs. Mix all ingredients together & then pour mayo mixture over & stir thoroughly, add parsley & celery seed to taste. Refrigerate about an hour before serving.
