Whole Wheat Doughnuts-Carob

Lower in calories and sodium, carob powder has been gaining popularity as a replacement for cocoa or chocolate.

Makes 10-12.

3 tbsp. carob powder
2 tsp. baking powder
1/8 tsp. soda
1/4 tsp. salt
1 tsp. ground cinnamon
1 c. whole wheat flour
1 egg
2/3 c. sugar
2 tbsp. melted shortening
1 tsp. vanilla
1/3 c. buttermilk
Oil for deep frying
Powdered sugar

Sift all-purpose flour with carob powder, baking powder, soda, salt and cinnamon. Mix in whole wheat flour. Beat egg until light in large bowl. Gradually add sugar. Stir in shortening and vanilla. Add flour mixture alternately with buttermilk, stirring lightly until mixed. Roll out dough, half at a time, about 1/2 thick on floured surface. Keep rest of dough chilled. Cut with floured doughnut cutter.

Drop, a few at a time, into deep oil heated to 375 degrees and cook 2- 3 minutes, turning once or twice. Drain on paper towels. Sprinkle with powdered sugar.
