Spiced Doughnuts-Three Ways

3 cups all-purpose flour
2 tsp. baking powder
1 1/2 tsp. apple pie spice or
ground cinnamon
1/4 tsp. salt
2 eggs, beaten
1/2 cup sugar
1/2 cup applesauce
1/4 cup butter, melted and cooled
2 Tbsp. milk
Shortening or cooking oil for
deep-fat frying
1 recipe Powdered Sugar Icing
Chopped pecans or walnuts
In a bowl combine flour, baking powder, apple pie spice or cinnamon, and salt.
In a large mixing bowl beat eggs and sugar together until well combined. Stir in
applesauce, butter, and milk. Beat in the flour mixture just until combined.
Cover and chill dough for 2 hours.
On a floured surface roll dough to 1/2-inch thickness. Cut dough with a floured
2 1/2-inch doughnut cutter, dipping cutter into flour between cuts. Reroll dough
as necessary.
Fry 2 or 3 doughnuts at a time in deep hot fat (375 [degrees]) about 1 minute on
each side or until golden, turning once with a slotted spatula or spoon. Drain
on a wire rack covered with paper towels. Repeat with remaining dough, frying
doughnuts and doughnut holes. Drizzle warm doughnuts with Powdered Sugar Icing;
sprinkle with chopped pecans. Makes about 14 doughnuts and doughnut holes.
Powdered Sugar Icing: In a bowl beat together 1 cup sifted powdered sugar, 1
tablespoon milk, and 1/4 teaspoon vanilla. If needed, beat in enough additional
milk until icing is of drizzling consistency.

Carrot Doughnuts: Prepare Spiced Doughnuts as above except increase sugar to 3/4
cup. Omit applesauce. To egg mixture, stir in 1/2 cup pureed carrots (baby food)
and 1/2 cup finely shredded carrot. Continue as directed above.

Banana Doughnuts: Prepare Spiced Doughnuts as above except add 1/4 cup finely
chopped walnuts and 1/4 teaspoon ground nutmeg to flour mixture. Omit
applesauce. To egg mixture, stir in 1/2 cup mashed ripe banana. Continue as
above.
