Pizza Soup


3/4 tsp. olive oil
2/3 cup onion, chopped
1 clove garlic, minced
2/3 cup green bell pepper, seeded and chopped
2/3 cup mushrooms, chopped
1/4 tsp. Italian herb seasoning
1-1/4 lbs. canned chopped tomatoes
2 ounces tomato paste
3 ounces pepperoni, chopped
3 ounces salami, chopped
1/3 cup shredded mozzarella cheese

Heat oil in a heavy non-reactive pot over medium high heat.  Stir in next 4 ingredients and sauté 4-5 minutes, or until onion is tender.  Stir in remaining ingredients, except cheese. Bring to a boil, stirring frequently.  Reduce heat to low and gently simmer about 1 hour, stirring occasionally.  Serve topped with mozzarella cheese.
