Apple Gingerbread Cobbler

4 medium tart apples, peeled and sliced
1 cup water
1/2 cup brown sugar
1 T. lemon juice
1/4 tsp. cinnamon
1 egg
1/4 cup sugar
1/2 cup buttermilk
1/4 cup molasses
2 T canola oil
1 cup flour
1/2 tsp. each baking powder, soda and ground ginger
1/4 tsp. each salt and ground nutmeg
2 tsp. cornstarch
1 T. cold water
In saucepan, combine the apples, water, brown sugar, lemon juice and cinnamon.
Bring to a boil. Reduce heat cover and simmer for 8-10 minutes or until apples
are tender. Remove from heat.
Combine flour, baking powder, soda, ginger, salt and nutmeg. Stir in buttermilk,
oil, and molasses until combined. Combine cornstarch and cold water and stir
into apple mixture. Pour into 8x8 baking pan coated with non-stick cooking
spray. Cover with gingerbread mixture. Bake 350° for 25-30 minutes.
