Almost Instant Banana Pudding

4 thick slices gingerbread
6 bananas
2 tablespoons lemon juice
1 1/4 whipping cream or ricotta cheese
1/4 cup fruit juice
2 to 3 Tbsp. brown sugar
Break up the gingerbread into chunks and arrange in an ovenproof
dish. Slice the bananas and toss in the lemon juice
Whip the cream and when firm, gently whip in the fruit juice. (If using
ricotta, gently stir in the juice.) Fold in the bananas and spoon the
mixture over the gingerbread.
Top with the brown and place under a broiler for 2 - 3 minutes to
caramelize. Chill to set firm again if desired or serve when required.
