Easy Mexican Casserole

1 lb ground beef
1/2 onion, chopped
1 10-oz can Rotel Tomatoes & Green Chilies
1 15-oz can chili with beans
1 14-1/2 oz can stewed tomatoes, chopped
1 10-oz pkg cheddar cheese, grated
tortilla chips, crushed
Brown ground beef and onion in skillet; drain excess fat. Add Rotel tomatoes and
green chilies and stewed tomatoes to skillet and heat through. Line bottom of
baking dish with crushed tortilla chips. Spread the skillet mixture over the
chips and top with grated cheese. Bake at 350° until cheese melts

I tried this recipe as above and then made a variation to my taste. I added a
small can whole kernel corn and can of black olives. Discarded the tortilla
chips, placed the mixture in a 2 quart casserole dish, whipped up a corn bread
and topped the mixture with corn bread. Baked 20 to 25 minutes. Used the grated
cheese and chopped green onions as garnish and found it much more pleasing to my
palate. Also have used a dollop of sour cream and guacamole.
