Beef And Cheese Tortilla Casserole

2 lbs (9kg) lean ground beef or turkey
1 medium onion, chopped
2 tsp (10ml) instant coffee
1 tsp (5 ml) salt
3 tsp (15ml) chili powder
¼ tsp (1ml) pepper
4x8oz (224g) tins tomato sauce
12 corn tortillas
3oz (84g) pk cream cheese
½ cup (125ml) water
2 cups (475ml) longhorn or other yellow cheese (grated)
12 ripe olives, pitted and sliced

Brown meat and onion in skillet. Add coffee, salt, chilli powder, pepper and 2 tins tomato sauce. Spread each tortilla with cream cheese (use it all). Place ¼ cup (60ml) meat on tortilla and fold. Place in greased 9x13 dish. Pour remaining mixture into spaces. Pour last 1 to 2 cans or sauce and ½ cup (125ml) water (2 cans for moister casserole). Sprinkle with cheese and sliced olives. Cover with foil and bake in oven for 25 minutes.
