The Blue Strawberry's Tuscan Ham on Flatbread

Makes 1 sandwich

Flatbread cut to sandwich size (about 3-by-4 inches)
1 slice smoked Gouda cheese
1 slice Cheddar cheese
2 tablespoons Parmesan-herb mayo (see cook's note)
3 ounces Cure 81 ham
1 ounce red pepper strips

Place slice of Gouda and Cheddar cheese on each flatbread slice. Spread Parmesan-herb mayo on cheese slices. Add ham and then red pepper strips. Microwave for 20 seconds and then grill on the panini grill for about 3 minutes, or until done.

Cook's note: To make Parmesan-herb mayo, combine 3 cups mayonnaise, 1 cup dijon mustard, 2/3 cup shredded Wisconsin Parmesan cheese and 2 teaspoons dried Italian seasoning.
