Brownie Peanut Butter Bites

1 cup chocolate chips
1 cup peanut butter
1/2 cup graham cracker crumbs
1/2 cup confectioners' sugar
1 tsp vanilla extract
1 pkg fudge cake mix (18.4 ounces)
2 eggs, beaten
1/2 cup oil
1/2 cup water
Confectioners' sugar for sifted topping
Preheat oven to 350 degrees F. Line mini-muffin tins with papers. Melt chocolate
chips in microwave. Cool slightly until warm and liquid but not hot. Meanwhile,
combine peanut butter, graham cracker crumbs, sugar, and vanilla extract. Mix in
melted chocolate. Chill about 15 minutes.
In a separate bowl, combine fudge cake mix, eggs, oil, and water until combined.
Fill mini-muffin cups half full.
Drop half-teaspoonfuls of the chilled peanut butter chocolate mix and press into
the center of each mini-muffin.
Bake about 12 minutes. Remove to racks and let cool completely. Refrigerate.
Once cooled, sift confectioners sugar over tops. Let sit at room temperature 30
minutes before serving.
Yield: about 6 dozen brownie bites
