Bleu Cheese Shortbread

12 Ounces Bleu Cheese, softened
1/2 Pound Butter, room temperature
2 1/2 Cups All purpose flour
1 1/4 Cups Cornstarch
1 1/4 Teaspoons Each Salt and Pepper
1 1/2 Cups Walnuts, chopped finely (optional)

Beat cream cheese and butter until creamy. In a separate bowl, combine flour, cornstarch, pepper, salt and walnuts. Add to cheese mixture. Roll into two logs, and chill until firm. Cut in 1/8 inch thick slices. Place on a cookie sheet or sheet pan lined with parchment paper. Bake at 375 degrees for 10-15 minutes, or until golden brown.
