Rhubarb Coffee Cake with Vanilla Sauce

Ingredients for Cake: 
1 cup sugar 
1 egg 
2 Tablespoons melted margarine 
1 cup buttermilk 
2 cups flour 
1 teaspoon baking powder 
1/2 teaspoon baking soda 
1/2 teaspoon salt 
1-1/2 cups chopped rhubarb. 
Ingredients for Topping: 
2 Tablespoons melted margarine 
1/2 cup sugar 


Blend 1 cup sugar, egg, 2 Tablespoons melted margarine and buttermilk together with a whisk. Add flour, baking powder, baking soda, salt and mix well. Stir in chopped rhubarb. Pour into pan. Mix Topping ingredients with a fork and crumble over cake batter. Bake at 360 degrees for 1 hour.

Vanilla Sauce 
3/4 cup sugar 
1/2 cup margarine 
1/2 cup evaporated milk 
1 teaspoon vanilla 


Mix sugar, margarine and milk in saucepan. Bring to rolling boil. Cook 1 minute, stirring constantly. Remove from heat and add vanilla.
