Blueberry Boy Bait

This simple dessert recipe can be served as a coffee cake for a morning meeting.
2 cups flour
1-1/2 cups sugar
2/3 cup butter
2 tsp. baking powder
1/2 tsp. salt
2 egg yolks
1 cup milk
2 egg whites
1 cup fresh or frozen blueberries
Preheat oven to 350 degrees F. Sift together flour and sugar into large bowl.
With two knives or a pastry blender, cut in butter until particles are the size
of small peas. Reserve 3/4 cup of this crumbly mixture for topping. Add baking
powder, salt, egg yolks, and milk to remaining mixture in large bowl and beat
until blended and smooth.
Beat egg whites until stiff but not dry and fold gently into batter. Spread in
greased and floured 12x8" pan. Sprinkle blueberries over batter and top with
reserved crumb mixture.
Bake at 350 degrees F. for 35-45 minutes until golden brown and cake springs
back when lightly touched with finger. Serve warm or cold. Serves 9
