Canadian No-Bake Cheesecake
1 1/4 cups Graham cracker crumbs
1/3 cup butter, melted
1/4 cup sugar
1 (8 oz.) pkg. cream cheese, softened
1 (16 oz.) can ready-to-spread vanilla frosting
1 Tblsp. lemon juice
1 Tblsp. grated lemon peel
1 cup whipped cream, beaten stiff
1/2 cup each: sliced almonds, fresh strawberries, and fresh blueberries
Stir together crumbs, butter, and sugar in small bowl. Press onto bottom and
1/2-in. up on the sides of a 9-in. spring-form pan or pie plate. Chill.
Beat cream cheese, frosting, juice, and peel in a large mixing bowl at medium
speed with electric mixer until well blended. Fold in whipped cream. Pour over
crust. Chill until firm.
Arrange almonds, strawberries, and blueberries on top. Refrigerate before
serving.
