Cheddar Meringue Pie

250 gm short-crust pastry
75 gm butter
75 gm flour
250 ml milk
200 gm grated Cheddar Cheese
2 egg yolks
seasoning

Topping:-
2 egg whites
50 gm grated Cheddar Cheese

Line a 20cm flan dish with the short-crust pastry, and bake blind in a moderate oven for 10 minutes. Melt butter in a pan, stir in the flour and cook for a few minutes. Slowly stir in the milk, and cook until smooth and thick. Beat in the grated cheese and remove from the heat. Add the egg yolks and seasoning, pour into the flan case. Whisk the egg whites until stiff, and fold in the remaining grated cheese. Pile on top of the cheese filling. Bake in a moderate oven until golden brown Serve hot or cold.
