Cheddar Monterey Jack Bread

3 1/3 cups biscuit mix (like Bisquick)
1 1/4 cups whole milk or 2% low-fat milk
4 ounces shredded cheddar cheese
4 ounces shredded Monterey jack cheese
2 large eggs (slightly beaten)
Preheat oven to 350°F.
In one bowl, combine the biscuit mix and both
cheeses. In a separate bowl, combine well the milk and
eggs. Add the egg mixture to the dry mixture and stir
until moist. Pour into a greased and floured 9" by 5" loaf
pan. Bake in preheated oven at 350°F oven for
approximately 55 min (your time may vary).
Remove from oven and let cool 10 min before
serving (it should be warm when served).
Note:
If you prefer other cheeses, feel free to
substitute, as long as the cheese is shredded
and it's in the same amounts given in the
ingredient list (Sharper flavored cheeses are best).
