Banana-Oatmeal-Pecan Bread
1/2 cup margarine, room temperature
1/4 cup honey
2 eggs
3 bananas, mashed
1/4 cup buttermilk
1 teaspoon Vanilla
1 teaspoon Baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup oats
2 cups whole wheat flour
1 cup pecans, coarsely chopped
Preheat oven to 350F. In a medium sized bowl, cream together butter and honey
until mixture is smooth. Beat in eggs one at a time. Stir in bananas, buttermilk
and vanilla. When well blended, mix in baking powder, soda and salt. Blend in
the rest of the ingredients.
Turn mixture into a buttered loaf pan 9 x 5 x 3-inches. Bake for 55 minutes.
Cool on wire rack.
