Taco Meatballs Con Queso


1-1/2 pounds ground chuck or ground chicken
1-1/2 cups Italian breadcrumbs
1/3 cup minced onion
1/3 cup milk
1/2 cup chopped parsley
1/2 tsp. lemon pepper
1 teaspoon Louisiana Hot Sauce 1 egg
1/4 cup oil
1 can (4 oz.) Casa FiestaŽ Diced Green Chilies
1 package Casa FiestaŽ Taco Seasoning Mix
3/4 cup chicken broth
1 lb. cheddar cheese, shredded
3 cups long grain rice 

Mix first 8 ingredients in a mixing bowl. Shape into small meatballs. Fry meatballs in oil until brown. Remove to absorbent paper. In a large skillet add chilies, Louisiana Hot sauce, taco mix and chicken broth. Heat through. Stir in cheese, remove from heat and add meatballs. Serve over cooked rice.
