Meat Loaf Stuffed w/Mashed Potatoes

1 to 1 1/2 pounds of lean ground beef
1 cup of chopped onion
2 eggs
1/2 cup of oatmeal
1/2 cup of crushed saltine crackers
2 15 oz. cans of tomato soup or tomato sauce (1 can goes in meatloaf, the other
can is for the top of the meatloaf)
6 medium potatoes (red/new or Irish)
chopped bell peppers to your taste is optional
Peel and cook the potatoes. When they're done, I add margarine and a little bit
of canned milk and whip them with a mixer.
Mix your meatloaf ingredients. Put flour foil or wax paper and flatten the
meatloaf into a rectangular shape on a piece of foil or wax paper.
Spread the whipped/mashed potatoes over the meatloaf. Roll the meatloaf into a
loaf pan. Pour the remaining can of tomato soup or tomato sauce over the
meatloaf. Bake @ 350 for an hour or until meatloaf pulls from the side of the
pan.
