Low Fat Meatloaf
1/2 lb 7% fat ground beef
1 tbsp Ketchup
1 tsp Worcestershire sauce
1 Egg white
1/2 small Carrot; peeled and sliced
2 tbsp Onion
1/3 cup Bread crumbs
Mix ground beef, ketchup, Worcestershire and egg white. Place carrots and onions in food processor and process very fine. Add carrots, onions and bread crumbs to the meat mixture. Pack mixture into a mini loaf pan. Bake at 350 degrees for 50 to 55 minutes. Remove from pan and cut into 6 slices.
3 servings, 2 slices each.
