Caramelized Corned Beef

1 (4 to 4-1/2 lb.) cooked corned beef
1/2 cup apricot preserves
2 tbs. brown sugar
1 tbs. soy sauce
Preheat the oven to 350 degrees. Place the corned beef in a roasting
pan that has been sprayed with non-stick spray. Combine the remaining
ingredients and spread over the beef. Cover tightly with foil and bake for
2 to 2-1/2 hours or until fork tender. Baste with juice several times
during cooking. Uncover for the last 20 minutes.
