Bourbons Bistro Goat Cheese Spread

1 head garlic
1 tablespoon (or a bit more) olive oil
1 pound cream cheese (softened)
½ teaspoon salt
½ teaspoon (freshly ground) black pepper
2 tablespoons diced red bell pepper
¼ cup fresh chopped spinach
3 ounces fresh goat cheese (use more if you like)
Heat oven to 400 degrees. Cut garlic head in half. Coat with olive oil. Cover in
foil, and roast until browned and soft (30/45 minutes). Cool; squeeze
out cloves. Mash the garlic with a fork.
Whip cream cheese and garlic until light and fluffy. Season with salt and
pepper. Fold in diced peppers and spinach. Place in a baking dish. Crumble goat
cheese over baking dish. Bake at 400 degrees for 15 to 20 minutes or until
lightly browned and bubbly. Serve with toast points or thin sliced crouton
crisps.
Makes 12 appetizer servings.
